Butternut Squash Bisque
with Brown Butter & Sage

Ingredients
- 1 large butternut squash, peeled and cubed
- 1 yellow onion, chopped
- 2 garlic cloves
- 4 cups vegetable stock
- ½ cup heavy cream
- Salt, white pepper, nutmeg
- 4 tbsp butter
- 8 fresh sage leaves
Instructions
- 01.Roast squash with onion and garlic at 425°F until caramelized, about 30 minutes.
- 02.Transfer to a blender with stock; purée until silky.
- 03.Return to pot, stir in cream, season with salt, white pepper, and a pinch of nutmeg.
- 04.In a small skillet, melt butter with sage leaves until butter is amber and nutty, 2–3 minutes.
- 05.Ladle bisque into bowls; spoon brown butter and crisped sage over the top.
