Ingredients
- 2 boneless chicken breasts
- Salt, pepper, olive oil
- 12 oz fettuccine
- 4 tbsp butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmigiano
- ½ cup grated pecorino
- ¼ cup mascarpone
- Reserved pasta water
Instructions
- 01.Sear seasoned chicken in olive oil until golden and cooked through; rest, then slice.
- 02.Boil pasta to just shy of al dente; reserve 1 cup pasta water.
- 03.In the same pan, melt butter and sauté garlic 30 seconds. Add cream and reduce 2 minutes.
- 04.Off heat, whisk in cheeses and mascarpone with a splash of pasta water until silky.
- 05.Toss in pasta and chicken; loosen with more pasta water as needed.
