Cast-Iron Chicken Alfredo

Ingredients

  • 2 boneless chicken breasts
  • Salt, pepper, olive oil
  • 12 oz fettuccine
  • 4 tbsp butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup grated Parmigiano
  • ½ cup grated pecorino
  • ¼ cup mascarpone
  • Reserved pasta water

Instructions

  1. 01.Sear seasoned chicken in olive oil until golden and cooked through; rest, then slice.
  2. 02.Boil pasta to just shy of al dente; reserve 1 cup pasta water.
  3. 03.In the same pan, melt butter and sauté garlic 30 seconds. Add cream and reduce 2 minutes.
  4. 04.Off heat, whisk in cheeses and mascarpone with a splash of pasta water until silky.
  5. 05.Toss in pasta and chicken; loosen with more pasta water as needed.

Cheese cooked too hot will seize. Pull the pan off the heat before whisking in your Parmigiano — it should melt from residual warmth.
