Truffled Mashed Potatoes

  • 3 lbs Yukon Gold potatoes, peeled and cubed
  • 1 stick unsalted butter, room temp
  • ½ cup mascarpone
  • ½ cup warm cream
  • Truffle oil, to finish
  • Shaved black truffle (or substitute truffle salt)
  • Salt to taste

Instructions

  1. 01.Boil potatoes in well-salted water until fork-tender; drain thoroughly.
  2. 02.Pass through a ricer or food mill — never a blender.
  3. 03.Fold in butter, mascarpone, and warm cream until silky.
  4. 04.Season aggressively with salt; finish with truffle oil and shaved truffle.
