- 3 lbs Yukon Gold potatoes, peeled and cubed
- 1 stick unsalted butter, room temp
- ½ cup mascarpone
- ½ cup warm cream
- Truffle oil, to finish
- Shaved black truffle (or substitute truffle salt)
- Salt to taste
Instructions
- 01.Boil potatoes in well-salted water until fork-tender; drain thoroughly.
- 02.Pass through a ricer or food mill — never a blender.
- 03.Fold in butter, mascarpone, and warm cream until silky.
- 04.Season aggressively with salt; finish with truffle oil and shaved truffle.
