- 1 cup farro
- 2 cups roasted butternut squash
- 1 bunch lacinato kale, massaged with olive oil
- ½ cup pomegranate seeds
- ½ cup toasted pepitas
- Crumbled feta
- Dressing: 3 tbsp tahini, 2 tbsp maple syrup, 2 tbsp lemon juice, 2 tbsp warm water, salt
Instructions
- 01.Cook farro according to package; cool slightly.
- 02.Layer kale, farro, and squash in bowls.
