Herb-Crusted Lamb Chops
with Mint Gremolata

Ingredients
- 2 racks of lamb (8 ribs each), frenched
- Salt, pepper, olive oil
- ½ cup panko
- 2 tbsp Dijon mustard
- 2 tbsp chopped rosemary
- 2 garlic cloves, grated
- Gremolata: ¼ cup parsley, 2 tbsp mint, zest of 1 lemon, 1 garlic clove (all finely chopped)
Instructions
- 01.Season lamb generously; sear all sides in olive oil until deeply browned.
- 02.Brush meaty side with Dijon; press panko-rosemary-garlic mixture into the mustard.
- 03.Roast at 400°F until an internal thermometer reads 130°F, about 12–15 minutes.
- 04.Rest 8 minutes; slice into chops between the bones.
- 05.Stir together gremolata ingredients; spoon over chops just before serving.
