    Season lamb generously; sear all sides in olive oil until deeply browned.

    Brush meaty side with Dijon; press panko-rosemary-garlic mixture into the mustard.

    Roast at 400°F until an internal thermometer reads 130°F, about 12–15 minutes.

  4. 4

    Rest 8 minutes; slice into chops between the bones.

  5. 5

    Stir together gremolata ingredients; spoon over chops just before serving.
