Maple-Glazed Thanksgiving Turkey

Ingredients

  • 1 (12–14 lb) turkey
  • Brine: 1 cup kosher salt, 1 gallon water, ½ cup brown sugar, 4 bay leaves, peppercorns
  • 1 stick butter, softened
  • 2 tbsp fresh sage, chopped
  • Glaze: ½ cup pure maple syrup, 2 tbsp Dijon, juice of ½ lemon
  • Aromatics: apple, onion, garlic, thyme

Instructions

  1. 01.Brine turkey 12–24 hours; rinse and pat dry.
  2. 02.Slip sage butter under the skin; stuff cavity with aromatics.
  3. 03.Roast at 325°F, basting every 30 minutes until thigh reaches 165°F.
  4. 04.During the last 30 minutes, brush with maple glaze every 10 minutes.
  5. 05.Rest 30 minutes before carving; build pan gravy from drippings.
