Maple-Glazed Thanksgiving Turkey
with Apple-Sage Pan Gravy

Ingredients
- 1 (12–14 lb) turkey
- Brine: 1 cup kosher salt, 1 gallon water, ½ cup brown sugar, 4 bay leaves, peppercorns
- 1 stick butter, softened
- 2 tbsp fresh sage, chopped
- Glaze: ½ cup pure maple syrup, 2 tbsp Dijon, juice of ½ lemon
- Aromatics: apple, onion, garlic, thyme
Instructions
- 01.Brine turkey 12–24 hours; rinse and pat dry.
- 02.Slip sage butter under the skin; stuff cavity with aromatics.
- 03.Roast at 325°F, basting every 30 minutes until thigh reaches 165°F.
- 04.During the last 30 minutes, brush with maple glaze every 10 minutes.
- 05.Rest 30 minutes before carving; build pan gravy from drippings.
