    Brine turkey 12–24 hours; rinse and pat dry.

    Slip sage butter under the skin; stuff cavity with aromatics.

    During the last 30 minutes, brush with maple glaze every 10 minutes.

    Rest 30 minutes before carving; build pan gravy from drippings.
